I'm not sure if it's still an issue with boats, but if it's anything like it was then any extended length boat race turns into a battle of who has the best internet connection.
I'm thinking for a longer race it might be best to do it Amazing Race style. Put little challenges at the various landmarks along the way that you must solve, and waiting for everyone to finish before starting the next leg of the race (those coming later/last either being eliminated or incurring penalties. Or something. Whatever seems the most fun and workable).
We'd also need to coordinate to make sure people show up. I think waiting for Summer (mid-June? What day is the 20th?) might be a good idea there.
A race around the world does sound like fun.
